Oil fish roe is one of three top local delicacies of Donggang. The pleasant salty flavor of oil fish rolls makes it a gourmet food every season of the year. Oil fish roe is made in a similar manner as mullet roe with a complicated process of washing, curing, drying, and sun exposure. In Taiwan, Donggang is the only area that makes of Oil Fish Roe.
